Cheddar Broccoli Rice Cups

There are 259 family farms growing rice, mostly in Northwest Mississippi.  In 2018 they brought in $177 million value of production.  That’s $21 million above the previous year.

Rice is nutritious, economical, blends well with any food pairings and is easy to make.  Best of all, rice is cholesterol-free, sodium-free and has no trans or saturated fat. Rice is also gluten-free and is the least allergenic of all grains.

Cheddar Broccoli Rice Cups

2 cups cooked rice, white or brown

1 10-oz. box frozen, chopped broccoli, thawed and excess water squeezed out

1/2 cup shredded sharp cheddar cheese

1/4 cup Ranch Dressing

2 eggs, lightly beaten

1/2 teaspoon salt

Pepper to taste

1/4 cup shredded sharp cheddar cheese

Place cooked rice in a large bowl.

Add the remaining ingredients, using only 1/2 cup of the cheddar cheese, and stir until combined.

Transfer mixture to eight well-greased muffin cups.

Top with remaining 1/4 cup cheese.

Bake 25 minutes at 350 degrees or until tops are lightly browned & edges start getting crispy.
