Cider Baked Sweet Potatoes

Sweet potatoes are not just for holiday meals.  They are a great addition to family meals and snacks throughout the year.

Cider Baked Sweet Potatoes

3/4  cup apple cider or apple juice

2 large sweet potatoes, peeled and cut into thin slices

1/2  teaspoon apple pie spice

Preheat oven to 350°. 

Placed sweet potato slices in a 2-quart. glass baking dish. 

Pour apple cider or juice over the sweet potato slices.

Sprinkle apple pie spices over slices.

Cover with glass lid or aluminum foil.

Bake for 1 hour or until tender.
